The unique dungeon armor skins are locked on the level 80 stuff. The gold rewards from the end all have some generic skin. You still could unlock the skin by buying the level 80 armor and trash it for the transmog. But that would be a bit of a waste depending on the armor you want to unlock. The best profession to skip the "classic" leveling on would be mesmer, however mesmer is a tricky profession and it might be hard to understand it if you simply jump to lvl 80 with it.
